Almond Raspberry Tarte
This cake is also known as "Linzer Torte". My kids call it "Marmelade Cake". Whatever you may call it, it's declicious anyways. Feel free to try it out and give it a name you think fits best.
Ingredients
- 125 gr butter
- 50 gr brown sugar
- 3 eggs
- 1/4 tsp salt
- 1 tsp cinammon
- 1/2 tsp lemon zest
- 100 gr flour
- 100 gr almonds, hooked
- 50 gr almonds, flour
- 225 gr raspberry marmelade, good quality
Preparation

As a first step, you will need
- butter, soft (not melted)
- brown sugar
- eggs
mix those for about 3 minutes to receive a fluffy consistency

Now add
- salt
- lemon zest
- cinnamon
- flour
- almonds, hooked
- almond flour
mix all together for another minute

grease lightley and flour your spring-form pan and add 2/3 of the dough and spread it out smooth (use a dough scraper), you will need
- laminate the dough with the marmelade (use a big spoon to do so), you will need
- put the rest of the dough in a forcing bag, the lip shouldn’t be bigger than 1 cm
- now do a grid (or whatever pattern you like) of dough on top of the marmelade
- put the cake in the oven, 180 degrees, for about 40 minutes (heated up beforehand)
